In Queso Emergency

This is NotYo (say it fast and it sounds like Nacho:) ordinary Queso! One of the things vegans and those on dairy restricted diets usually say they miss the most is cheese. And who can blame them? Cheese is delicious, but it can have some not so appealing side effects like phlegm, upset stomachs, sinus/ear infections, or other reactions depending on the person eating it. But, In Queso Emergency, if you’re hankering for some cheese, we have you covered! This is a raw cheese but can be warmed if you really want that nacho experience. It won’t be quite as healthy if it’s heated above about 115º-120ºF, but it will get you through your nacho cravings. We use it as a dip with our favorite chips, such as sweet potato chips, or fresh cut veggies, or it can be poured over rice, quinoa, steamed veggies, or noodles for a more filling meal. Mmmmm.
